Since opening at the former site of the legendary Guida’s Dairy Bar in New Britain, Connecticut, Frisbie’s Dairy Barn has quickly established itself as one of New England’s premier destinations for handcrafted ice cream. Known for its small-batch, Super Premium ice cream made in-house with a rich 14 percent butterfat recipe, Frisbie’s offers 24 to 36 flavors daily, ranging from timeless classics and seasonal favorites to dairy-free options and imaginative originals.

The business has flourished under the leadership of Paul Parks, who first managed the shop as a college intern before purchasing it with his father in 2020. Since then, the ownership team has expanded, and so has the Frisbie’s brand, with locations now serving customers in Windsor, Sturbridge, North Attleborough, and West Hartford’s Blue Back Square, while maintaining its commitment to quality and memorable customer experiences.

But the real scoop isn’t just what’s in the display case—it’s the opportunity to create a flavor all your own.

Inspired by a desire to offer something beyond great ice cream, Parks introduced the Ice Cream Making Experience in 2024. Although space limitations initially made the concept challenging, the classes quickly became one of Frisbie’s most popular attractions. Originally planned as an off-season offering, demand has remained so strong that they now continue throughout the busy summer months.

Frisbie’s popular Ice Cream Making Experience is a 90-minute, hands-on class that took us behind the scenes to learn the art of making premium ice cream.

Held in the New Britain production kitchen, the experience has become a favorite for birthdays, family outings, date nights, team-building events, and anyone looking for a fun and memorable activity. Open to individuals and groups alike, the class costs approximately $75 per person and includes the hands-on experience, a complimentary sundae, and a gallon of your custom-made ice cream to enjoy at home.

Our class leader, Fasiah, was awesome and very friendly.

She gave us an extensive assortment of mix-ins like m&m’s, cookie dough, marshmallows, brownie pieces, Heath bar, Oreo’s, chocolate & rainbow sprinkles, gummy bears, and peanut butter cups.

Swirls included Nutella, honey, black raspberry, Reese’s peanut butter sauce and Hershey’s chocolate syrup. She was even able to provide requests for caramel sauce and mint extract and other ingredients to design a custom flavor that was unique to each of us.

The inspiration for my creation was the Choco Cherry Love Blizzard from Dairy Queen (last available in 2012; you can read more about it here). It was my favorite. Why it was ever removed from the menu remains a mystery. Sweet cherries lovingly blended with shaved chocolate pieces and creamy vanilla ice cream. I mixed in a dash of chocolate syrup and lots of peanut butter cups as well. The flavor profile is spot on!!!

Afterward, we enjoyed a complimentary sundae while our creations were placed in the freezer overnight to harden. We were asked to return the following day (or later in the week if needed) to pick up a full gallon of our one-of-a-kind masterpieces.
